From what I can tell there is no way to handle tables with composite keys other than work-arounds. I found a couple of threads asking about this, but there doesn't seem to be much interest in adding that feature.
I think composite key support is important. Tables that use composite keys as the primary key are quite common, and in fact that is pretty much the standard approach to designing the associative table for a many-to-many relationship.
I've just started working with PhpMyEdit (and what a great tool, by the way) but it doesn't seem like composite key support would be that hard to implement.
Anyway, that's my request for the moment.
